I've never tasted pigs' or calves' liver. I've only tried braunschweiger from the store, which has a smooth texture and a palatable taste.
i got memed into convincing my mom to make beef liver and had her do the "soak it in milk" thing and everything and then i couldn't eat more than 1 bite because the metallic taste was so overwhelming

Beef liver with mustard is pretty serviceable. The mustard masks the metallic flavor and cuts through the richness a bit
